- Season chicken with what you like, I like to use a tomato basil seasoning
- Bake chicken at 375 for 20 minutes
- While chicken is baking, cut and clean the seeds out of the peppers
- After the 20 minutes sprinkle the bread crumbs on top of the chicken and add the peppers around the chicken, bake an additional 10 minutes
- Sprinkle the shredded mozzarella all over everything… Don't be shy
- Lay slices of pepper jack on top, covering all the peppers and the chicken and put it back in the oven an additional 10-20 minutes depending on if you just want the cheese melted or golden. Serve and enjoy
Roll each chicken breast tightly and fasten the seams with several toothpicks. Flatten chicken with a meat mallet. Place a strip of cheese down the center of chicken. Fold chicken over cheese and secure with toothpicks. If you're a fan of salsa verde, you're going to love this chicken.
