  1. Heat oil in a thick deep pan and add peppercorns, black and green cardamoms, cloves, cinnamon, dry red chilies, star anise, cumin, bay leaves, nutmeg powder and mace, and fry for 1-2 minutes, or until the spices are sizzling and fragrant. 
  2. Add the chopped onion, and fry it for 5 minutes or until golden brown. Then add the mutton pieces, and fry for 5-7 minutes in high heat. Then add ginger-garlic paste, and cook for 3 to 4 minutes, stirring frequently.
  3. Then make a thick paste of curd and all dry powder spices like coriander, cumin, turmeric, kashmiri red chili powder, fennel seeds, garam masala and ginger powder, and salt to taste. Add that to mutton mixture and stir. Cover the pan with a lid, and then reduce the heat to low, and simmer for 10 to 12 minutes, or until the masala is completely fried and it releases oil.
  4. Add 1-1/2 tumbler of water and cook it for 40 min with the lid closed or until the meat becomes tender and the gravy is medium thick in consistency. Garnish with chopped coriander and serve with rice, pulao or roti :)
