Whole Roasted Chicken with Lemon, Garlic & Rosemary- Roasting a whole chicken might sound like it would be a cumbersome endeavor, but in reality it is SUPER SIMPLE! Add the garlic, rosemary, EVOO, lemon zest and grill seasoning or salt and pepper to the dish. Toss and coat the chicken with all the ingredients, then place in the oven. Add the wine or chicken stock and lemon juice to the dish and combine with the pan.
Instructions to make Lemon, garlic and rosemary chicken roast:
- Rinse the chicken clean and pat dry with kitchen towel. In a bowl, throw in the chicken, Salt, oil, spice, shredded rosemary and coat the chicken.
- Layer a foil and place the seasoned chicken. Place a slice of lemon on each piece of chicken, throw in the garlic cloves and the remaining rosemary. Wrap tight with foil and place on grill / oven for 45 min
- Open foil and place chicken directly on the grill for the remaining 15 min allowing to brown on each side.
Place in large oven proof dish. Squeeze juice from the lemons over the chicken. Add the lemon to the dish along with garlic, rosemary, red pepper, salt and pepper. Can broil at the end for darker, crisp skin. Unfortunately just tossing some rosemary on to the chicken did nothing to flavor it.
