In a large sauce pan over medium-high heat, add the mushrooms and sprinkle with kosher salt. After a minute or two they will start to make a squeaky noise and then add the oil and the onion.

- If you find the gravy too thick add more stock to reach your preferred consistency. For a smooth gravy, puree it in the pan with a stick blender
