Method Peel the onions, garlic and carrots, trim the celery and pick the rosemary leaves, then finely chop. Pour in the wine and let it bubble and cook away, then tip in the lentils (juices and all).   2. Chop the veg and cook in a little oil. Add the vegan mince or lentil. Add the chopped tomatoes, garlic and herbs and bring to a simmer.
  3. Prepare the lasagne by adding a layer of the tomato and veg, a layer of lasagne and a layer of white sauce. Top with bread crumbs or vegan Parmesan and herbs.
  4. Bake in an oven for around 35 minutes at 200c. I served in individual dishes with a side salad 😊
