  5. Remove the roast from oven and turn heat up to 500 degrees F. and cover roast with heavy-duty foil. Allow the roast to rest until an internal temperature of 130 degrees F. is reached.
  6. Place the roast back into the preheated 500 degree F oven for about 10 minutes or until you've achieved your desired crust. Remove and transfer roast to a cutting board. Keep covered with foil until ready to serve.

On the roast, rub the garlic, then the salt and pepper and place it, fat side up, in an uncovered pan. Rub butter on the cut ends of the roast. Combine flour, salt and pepper together in a small bowl, and then massage the mixture all over the meat. Set the roast, rib side down, in a shallow roasting pan (the ribs act as a natural rack), and place in the oven. I made prime rib for the first time for our family Christmas dinner.
