- Remove from oven, and let rest on dish for 2 minutes.
- Remove to cutting board and rest 5 minutes.
- Slice cuts to desired thickness or temperature.
Place the prime rib in a shallow roasting pan, fat side up. Roast your prime rib for one hour, and then turn off the heat. Do not open the oven door or take out the roast. Leave the prime rib in the oven. Remove the pan from the oven, put the rosemary sprigs on top of the bones, then top with the prime rib.
